The Correia Family

The St Peter Knights proudly recognize the family of David and Katie Correia as our Family of the Month.
David and Katie's story began with a chance meeting in Pennsylvania. where David's background as a professional golfer entrepreneur spirt brough him into the restaurant industry -- and into Katie's life. Originally from Massachusetts, David played collegiate golf the University of Mississippi University and Bryant before taking a professional shot on the Japan tour. His entrepreneurial spirit led him to start several businesses, eventually bringing the newly married couple to South Florida.
Katie, a devoted physician assistant, shares David's deep commitment to faith and service. Raised Christian, she joined the Catholic Church through RCIA program, inspired by David's strong faith--rooted in the example of his mother, a former nun. Today, the Correia's live in Eastpointe Country Club, PBG. After many years as a hospitalist P.A., Katie now works at the Atria Institute of Palm Beach Island.
Their children, Emma (14) and Christian (11), attend All Saints Catholic School. Emma will graduate in May and continue her education at Cardinal Newman High School. Both children are active in parish life -- Emma serves as an altar server, while Christian is a collections usher. Together, Katie and Emma dedicate Saturday mornings to St Peter's "Food for Families" Ministry, with David and Christian supporting them every step of the way.
David joined the St Peter Knights two years ago. He and his family have found many ways to aid our causes as they have been very active in our annual soccer challenge, special collections and most recently took on the responsibility of ensuring tables were set and the all important pancakes were ready for the 8 and 930 masses. They continue to place God at the center of all they do.
We are blessed to have the Correia's as part of our parish and the St Peter Knights of Columbus.

May Knight of the Month
Joseph Watters

Joseph Watters has been a proud member of the Knights of Columbus for nearly two years and is a Third Degree Knight. Since joining St. Peter Catholic Church in 2022, he has remained an active and engaged parishioner, participating in both liturgical ministry and parish events. Through the Knights, Joseph has volunteered in the baseball stadium, Sunday Breakfast, The Christmas Parade, charitable outreach, and parish support initiatives, consistently demonstrating his commitment to faith in action.
Born in White Rock, British Columbia, and raised in Kingston, Ontario, Canada, Joseph now lives in Jupiter, Florida, where he is raising his two daughters, Juliette and Sienna. Both girls are involved in the parish, and all enjoy the congregation at St. Peter's Catholic Church.
Professionally, Joseph is an accomplished Executive chef with a distinguished international culinary career. He also sits on the Board of directors as First Vice President for the American Culinary Federation of Palm Beach Chapter for the past 7 years. Joseph Graduated From The Prestigious Le Cordon Bleu in Ottawa Canada. He then moved to France and trained under some of the world’s most renowned chefs in 3 Michelin-starred kitchens, including Marc Veyrat and Laurent Petit. His career has taken him from Canada to France, the Cayman Islands and now to Florida, where he serves as Executive Chef at Jonathan’s Landing Golf Club, one of the top-ranked Platinum Clubs of America.
In January 2025, Joseph proudly captained Culinary Team USA at the prestigious International Catering Cup in Lyon, France. Under his leadership, the team earned the coveted World’s Most Artistic Buffet award—marking a historic achievement for the United States in this elite global competition. Joseph has also actively competed around the USA winning various competitions.
